Every February 15th, I get to wondering what lobster fishermen get up to during the closed season. From June 15th to February 14th, they have been working their traps and heading out to check on their catch, cleaning and selling them for our consumption and for export.

Tasting my first Boil Up

I’ll be honest; when I wrote down my list of foods to try out, I legitimately was dreading the thought of Boil Up. Individually, each ground food is not my favorite. All-together, talk about overdose of least favorites. Then throw in fish? And dumplings (or boiled cake). Pumpkin Sweets – Dulce de Calabaza

Stewed pumpkin sweet – this succulent treat is a combination of brown sugar and warm spices, stewed for a few hours, the brown sugar caramelizing into a syrup that’s full of flavors from cinnamon, star anise, allspice seeds, and of course, bits of the deliciously thick pumpkin flesh that falls apart throughout the cooking process. YUM!

Awestruck by Caracol Maya site’s Majesty

The latest census figure for the entire country of Belize is under 400,000 within 8867 square miles. So you can imagine how difficult it is to understand how one 75 square-mile site could have housed half our current population. But, that’s the archaeological belief – that Belize’s largest Maya site – Caracol, was home to 200,000 Mayas, housed in around 35,000 buildings.
