Our Belizean Treats Challenge continued over the weekend! On day five (Saturday) it was all about a Mestizo favorite: Salbutes!

Crispy fried corn dough (seasoned with recado & some salt), topped with shredded stewed chicken, a tangy cabbage slaw, diced & pickled tomatoes, plus a little jalapeño! ??? now, planning Sunday dinner already…mmm!
But our taste buds really exploded on day six (Sunday) with the all time Belizean favorite: Rice and Beans with stew chicken and potato salad! YUMMMMMM!
It’s Sunday! That means, lunch is as #Belizean as it gets: #riceandbeans! ??? Rice is cooked with stewed beans & coconut milk, topped with stewed chicken, served with fried plantains, potato salad, and when in season, a slice of avocado.
